『 Ushi no Akawain Nikomi | Stewed Beef w. Red Wine 』 Hi everyone, I’m MASA This time I would like to share a very tasty Japanese style of Western Cuisine to you all It’s called Gyoniku Akawain Nikomi In Mandarin it’s called “Hong Jiu Dun Niu Rou” This dish is originally French cuisine used red wine to stew beef & require long cooking time This time I’m going to use Japanese seasoning a slightly modified version of Japanese style Western cuisine The taste can be matched with bread or rice, which is very suitable Alright ! Let’s do it ! Alright ! I’m going to use this * Beef finger rib – 500gm This type of meat can be stew for a long time the taste of the beef stew is smooth & tender If you don’t eat beef, can replace it with pork If is use chicken, can choose drumstick which is also suitable * cut into edible sizes * Salt & Black pepper – some * Rosemary or Italian herbs – some * marinate roughly 15 minutes * Beech white mushroom – 1/2 bag * peeling into small pieces * Maitake mushroom – 1/2 bag * cut into small pieces * Onion – 1/2 piece * cut into pieces * Carrot – roughly 60gm * roll cut * Garlic – 2~3 pieces * finely sliced * Canned tomatoes – 400gm # This time I’m using Italian peeled tomatoes # Can use fresh tomatoes but remember to peel them ! * put into juicer, blend until puréeing * medium-high heat * Butter – 1 teaspoon * add the sliced vegetables * stir fry onions until to translucent * add the sliced mushrooms # After added the mushrooms, fry until golden brown # Stir fry until to aromatic ! Alright ! Next I’m going to take this marinated beef put it into stew pot I personally prefer the outer skin is slightly golden brown & aromatic And I want to keep the meat juice so I’ll add the flour first & stir well make sure every piece of meat is keep the meat juice Is it low gluten flour or bread flour? I’ll suggest use bread flour because bread flour is not easy to be agglomeration it can be easily wrap it up every piece of meat Take a look, I’m holding it the flour is easily to disperse hmm Because it’s easy to disperse each piece of meat can be evenly coat with flour * Bread flour – 2~3 tablespoons # Make sure every piece of meat evenly coat with flour, don’t stick together * medium-high heat * add in oil * meat evenly place in the pan * fry until golden brown * can turn over ! * on the other side also fry until golden brown # Out of sudden to recall I’ve a nice Whisky at home, decided to add in * Alcohol is easy to ignite, please beware of fire !! # Can be use Brandy. Of course it’s OK if is without ! * Red wine – 200cc * pour into stew pot * add the puréeing tomatoes * Rosemary – some * Salt & Black pepper – some # Just add a little basic seasoning because later on still have to add others * cook over low heat around 30 minutes # If there’s less water in stew, add some water ~ ! Alright ! It’s almost time The flavoring part is to look at your habits Basically there’s only salt & black pepper for seasoning This time I’m going add more for flavoring so I’ll add some seasoning * Honey – 2 teaspoons # The sweetness of honey can be neutralize the acidity of the tomato taste And my secret ingredient is Hatcho miso This miso is came from Nagoya and the color is very dark add this miso can bring out another flavor You can use general miso if you don’t want to add miso can be use soy sauce also Don’t add too much of these seasonings obviously can taste the miso flavor it’s easy to get greasy and it will become taste like miso soup I’m not going to add much of this miso just add little bit only and can replace of salty taste * Hatcho miso – 1/2 tablespoon * add some water & stir well * drench some whipped cream / * Rosemary for garnished OK ~ A tasty looking good stew beef with red wine are done Oh ~ Pretty ~ I can’t wait anymore, just eat it Dewa Itadakimasu ~ Hmm ~ !! The meat is so tender ! The meat was pan fried so can smell the aroma after tasting inside is very tender I’ve used salt, black pepper & rosemary for marinated so inside is very tasty I only used tomatoes puree for sauce paste This type of sauce can bring out of rich flavor it’s just a right taste for this and also added little bit of miso the taste not so obvious and there’s still extra flavor for the taste Will feel satisfied when eat it with bread or rice Can be use other seasonings like soy sauce, oyster sauce or fish sauce bring out rich flavor when match with these type of sauce Well, feel free please try on it ~ !
