Hi I’m Chief Peter Manifis and I’m down here
at beautiful Sandalford Winery to check out some of chief Andrew Mann’s and remains
fantastic local produce. Sandalford Winery recently joined Buy West Eat Best restaurant program. Which means that up to 70%
of Andrews menu is sourced locally here in WA. Now let’s get in the kitchen and see what
Andrew is cooking up. So Andrew are you one of the first Buy West Eat Best restaurants to jump on board with this new program what’s your philosophy behind local produce
and using it you know. It is important that we use our resources around us, because when we have to serve something to
our guests and also been a big tourism restaurant
It’s important that people, comes to WA to eat West Australian food. So in our restaurant we do a seasonal menu
so every three months we basic scrap the menu and completely start again and the menus inspired
by what supplies have for us. So we’re going to seal them in the pan. We have our little nuggets were going to call
them that. ( Clink of spoon on pan ] I love pork cheek Nice isn’t it Now we are onto the scallops normally we would
serve two. Is third one is for you Pete. Most definitely, definitely all right. ( Clink of spoon on pan ] Just up there A little bit of crackling which will go onto
the top, really quite simple So that’s it, so we have the Pumpkin skordalia
with confit of smoked garlic. A 24-hour braced Timber Hill pork cheeks with
a little bit of Szechuan pepper, little bit of honey and things in there as
well and some crackling and scallops, Shark Bay scallops. Beautiful thank you. Oh, thats mine see you later. This is a perfect example of fisher, farm
to plate. Western Australian produce and its best. Thank you chef Andrew Mann and thank you to
