Cedar Ridge Port Cask finished aged rum

Bar for another episode of Rum Minute. Today, we’re looking at Cedar Ridge Port Cask
five year old aged rum from Iowa. Jeff and Laurie Quint established their vineyards
near Swisher, Iowa in 2002. Their winery and the distillery opened in
2005. This unique Port Cask rum expression emphasizes
their dual expertise as the only integrated distillery and winery in Iowa. Cedar Ridge Port Cask five year old aged rum
is fermented and double-distilled in an 80-gallon artisanal pot still. The spirit is then placed in single-use ex-Bourbon
casks to mature. After the five-year mark, the rum is transferred
to freshly emptied Cedar Ridge Port barrels for a unique finish. The nose leads with aromatic wood over vanilla,
honey and a berry note. On the palate, a dry entry features vanilla
over butterscotch before big warmth at mid-palate. The wine notes emerge to compliment the wood
before brown butter and floral accents give way to a warm, dry finish. This limited edition Cedar Creek Port Cask
5-year aged rum is a fine example of the creativity and expertise of American rum producers. Bottled at 46%, the 750ml bottle carries a
suggested retail price of $45.
