Followed this perfectly to a T, gas oven, 170 degrees. After 2 hrs 45 mins the meat isn't even close to falling apart. Now all my sides are ready and I'm waiting another hour to check. I think the real time is 3-4 hrs for meat to be falling apart. I want it at 5 star status. Not like a cheap steak. Thanks Gordon!!!
